Salad for Dinner
A summer dinner that filled the compost bin.
Liam is a super star at salad for dinner made from the CSA box. He made this one two nights in a row and it was delicious: Cut leeks and a yam into thin slices and fry them. Mix with lettuce, sliced pears and persimmons. Shave parmesan and carrot on top. Salad dressing: mince shallots and garlic and mix with olive oil, lemon juice, salt and pepper.
This tasty/unexpected combo is satisfying but not too heavy.
On a salad-for-dinner kick with arugula, roasted potatoes, avocado, fresh corn and coconut-lemongrass fried chickpeas. Involved the use of coconut almond milk, what!
Rather that using chickpeas from a can, I recommend these delicious ones sold in a jar from Picuezo. Definitely worth the few extra bucks - the texture makes all the difference.
