Jill and I have been obsessed with avocados since we met in high school. I still regret selling the avocado pillow that we made on eBay about 10 years ago. This recipe uses avocados to make a creamy delicious vegan treat that even junk food addicts couldn't resist.
I had two avocados that I didn't want to go bad and was in the mood for something sweet, so I looked up vegan chocolate pudding recipes online. I came across the website Minimalist Baker, made by a super cute couple in Portland. This recipe is a slight variation on their Chocolate Peanut Butter Avocado Pudding.
- 1 1/2 avocados
- 1 banana
- 1/4 cup of unsweetened cocoa powder
- 1/4 cup (or less) of almond butter
- 1/4 cup of almond milk
- 1/3 cup of coconut nectar*
- 3 dried pitted dates
Blend all of the ingredients until creamy. That's it! This pudding is very rich so it makes at least 6 servings.
*You can also try agave nectar, maple syrup or no sweetener at all since you have banana and date in there!
