Cranberry-Kale-Apple-Fennel Chicken in a Skillet

The bag of fresh cranberries in my fridge have been wondering why I've been ignoring them since Thanksgiving, so I decided to add them to the dinner I was making in a cast-iron skillet. Those things stay fresh forever!

I sautéed shallots in coconut oil, then added organic skinless boneless chicken thighs into the skillet (plus salt & pepper). Once the chicken browned, I squeezed in some lemons from my parents' lemon tree and added chopped fresh kale, fennel, apple and of course the cranberries!
